Oddbird began in 2013 when Swedish family therapist Moa Gürbüzer set out to change how we drink — wine made properly, then freed of alcohol. The Blanc de Blancs is Chardonnay and Colombard from the Languedoc, matured a full year before the alcohol comes out. Crisp Granny Smith apple, honey, a squeeze of lime, delicate bubbles, bone-dry. Organic, vegan, built for a toast.
