Out of Murray Paterson's Copenhagen blendery, built entirely on fermentation. Yamilé is the sparkling rosé — carbonic-macerated raspberry, smoked rhubarb, goldenrod, and a pink-peppercorn kefir lift. Soft red fruit, a creamy thread of smoke, dry and bubbly with a playful vinous funk. Named for a friend, made for the table.
