Saint Viviana starts with genuinely good wine, then removes the alcohol — a year-long project with US winemakers and a master sommelier. The Cabernet comes off Paso Robles fruit: blackberry and plum, coffee, vanilla and toast, opening to black currant, dark cherry, and baking spice. Leather and tobacco linger, the tannins run muscular, the finish carries cocoa. A Cab that stands up to a ribeye.
